Pizza with Seitan and Daiya® Cheese | Meatless Monday

Pizza with Seitan, Broccoli and Daiya Cheese

Pizza with Seitan, Broccoli and Daiya Cheese

I am always looking for creative ways to prepare leftover homemade seitan since one package feeds our family for four days! Although it's super economical and convenient, it can get a bit monotonous so this weekend I used seitan in a few recipes where I would normally use another vegan meat.  For this delicious, easy pizza I used seitan as my meat instead of using veggie ham or sausage.

BBQ Seitan Burger

This is a perfect use for the Seitan Steak. The texture is amazing and the seitan is juicy and tender.

Preparation and Assembly Time: 12 minutes
Cooking Time: 10 minutes
Yield: 4 sandwiches

INGREDIENTS

8 slices Seitan Steak, or several pieces homemade seitan or ready made seitan (available in the refrigerated section of most health food markets)
½ sweet onion, thinly sliced
½ cup BBQ Sauce
4 burger buns or submarine sandwich rolls
Vegenaise® Original Spread
1 tomato, sliced
1 avocado, sliced (optional)
Fresh greens
Oil for sautéing

  1. Put in enough oil to coat the bottom of a skillet and heat to medium heat. Sauté the onions until they are translucent and then add the seitan slices.

  2. Add the BBQ sauce, turn up the heat, and continue to cook, stirring the seitan and onions constantly. Cook for a couple of minutes until the seitan is slightly crispy and the onions are caramelized.

  3. Spread a thin layer of Vegenaise® on the inside of each bun or roll. Add the seitan and onions, a little more BBQ sauce (to taste), fresh greens, tomato and avocado, and spinach or alfalfa sprouts.

Makes 4 burgers or sub sandwiches.

Mapo Seitan with Broccoli

Mapo Seitan with Brocccoli

Mapo Seitan with Brocccoli

Mapo Seitan with Broccoli is a creative way to use your leftover homemade seitan! Very similar to our Mapo Tofu but a bit heartier.

Official Meatless Monday Blogger

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Yield: 3 - 4 servings

INGREDIENTS

4 cups homemade seitan, excess water drained, cubed. (You can use ready made seitan for this recipe as well)
½ cup flour
1 tablespoon corn starch
¼ chopped red onion
4 cups broccoli, chopped
3 cups cooked rice (optional)
Oil for sautéing

SAUCE
¾ cup sweet chili sauce
2 teaspoons black bean garlic paste (Lee Kum Kee Black Bean Garlic Sauce recommended)
4 tablespoons soy sauce

DIRECTIONS

Step 1:   Put the cubed seitan on a paper towel to drain excess water. Mix flour and cornstarch together. Place cubes into the flour cornstarch mix to coat the seitan.

Step 2:  Heat oil until hot (add a drop of water to the oil, it should platter when ready). Fry the coated seitan for 5 - 6 minutes until light brown and crispy. Set on paper towels to drain and cool.

Step 3:  For the sauce, mix together the sweet chili sauce, black bean garlic sauce and soy sauce. Set aside.

Step 4:  Lightly sauté, in a little bit of oil, the onions and broccoli for about 4 – 5 minutes until the broccoli is tender but not soft. Cover and let steam for a few moments if necessary. Turn off the heat and add the seitan.

Step 5:   Stir in the sauce. Serve over rice.

Makes 3 - 4 servings.
