BBQ Black Beans with Chick'n Over Rice

BBQ Black Beans with Chick'n Over Rice

BBQ Black Beans with Chick'n Over Rice is a hearty dish that is easy to prepare and makes a great "centerpiece" for your vegan dinner. Great use of leftover BBQ sauce also!

Preparation and Assembly Time: 10 minutes
Cooking Time: 10 - 15 minutes
Yield: 4 - 6 servings

INGREDIENTS

½ sweet onion, chopped
4 pieces Gardein™ chick’n “breast”, cut into large chunks, or 2 ½ cups chopped vegan chicken substitute
1 teaspoon ground cumin
1 (15 oz.) can black beans, washed and drained
1 ½  cups BBQ Sauce
Sea salt (optional)
Oil for sautéing
3 cups cooked rice

DIRECTIONS

  1. In a large skillet or frying pan, add a small amount of oil and sauté the chopped onion, Gardein™ and cumin on medium-high heat until the onions become translucent and the Gardein™ is slightly brown and firm.
     
  2. Add the black beans and BBQ sauce and continue to cook for a couple of minutes, stirring constantly so that the beans won’t stick. Taste. Add more cumin or a dash of sea salt if necessary and let simmer for about five minutes.

Serve over a bed of cooked rice.

Makes 4 – 6 servings.
