Fried Chick'n (Meatless Mondays Week 13)

Fried Chick'n

You know there had to be a vegan version of Fried Chick’n, right? That was very high on my conversion list! Try dipping in BBQ or Hot Wings Sauce also or make a sandwich or wrap out of them! These stay moist and delicious for days.

Preparation and Assembly Time: 12 minutes
Cooking Time: 30 minutes
Yield: About 24 pieces

INGREDIENTS

8 pieces Gardein™ chick’n “Breasts” cut into strips (about 3 strips each)
2 cups flour
1 teaspoon salt
½ teaspoon garlic powder
1 teaspoon pepper
1 teaspoon Spike® (optional)
½ cup warm water
4 tablespoons yellow mustard
2 cups BBQ or Hot Wings sauce (optional)
Oil for frying

DIRECTIONS

1.    In a small mixing bowl, combine the flour, salt, garlic powder, pepper and Spike®. Mix thoroughly. In another small bowl, mix the mustard with the water. Add 2 tablespoons of the flour mixture to the mustard and water and stir until the lumps of flour are smooth and you have a batter about the consistency of pancake batter.

 2.    Heat the oil in a large frying pan (or deep fryer) on high heat. There should be enough oil in the frying pan to cover the bottom and about ½ inch deep.

 3.    Dip each Gardein™ slice into the mustard batter, and then into the flour mixture. Fry each slice on both sides in oil until golden brown (about 5 minutes each side). Remove from heat and let each piece drain on paper towels to remove excess oil.

- OPTIONAL

 4.    Put the BBQ or Buffalo Wings sauce in a small bowl and dip each side of the cooled fried chick’n until it is well coated. Cover a broiler pan with aluminum foil and place the chick’n on the pan. Broil each side under high heat until crispy. Or, just dip them in the sauce and eat!

 Makes 24 pieces. You can also leave the Gardein™ breasts in tact and make 8 large pieces instead.
